Fresh pandan, kampung eggs and first-press santan, stirred over a double boiler for two hours until it sets on its own. Six ingredients, no pandan essence, no preservatives — the same copper pot our family has used for forty years.

What goes in

Three ingredients define our kaya.

Read the back of a supermarket jar and you will find nine or ten, most of them preservatives. Ours has pandan, coconut and egg, the sugar cane that sets them, a spoon of flour, and a drop of colouring. Nothing after that.

Daun pandan

Pandanus amaryllifolius

Fresh pandan leaves are picked from the family garden, washed and knotted by hand before being added to the kaya. They lend a gentle fragrance to the custard, and because that aroma is easily lost to heat, the mixture is never brought to a boil.

The colour it leaves behind is a soft jade — and it is the aroma, not the colour, that we buy it for.

Santan

First-press coconut milk

Pressed from mature kelapa at the wet market and used within hours. First press only — the second is thinner and would need starch to hold the set.

This is the ingredient that makes kaya rich rather than merely sweet.

Telur

Eggs

Whole eggs, yolks and all, whisked and passed through a fine sieve twice. The yolk does most of the thickening and all of the richness; the flour only steadies what the egg has already set.

Deeper yolks make a deeper kaya. We pay more for them for exactly that reason.

Since 1984

One pot, two generations, and a rule that never changes.

The rule is the two hours. Every shortcut in commercial kaya exists to skip them — cornstarch by the cupful, pandan essence in place of leaf, high heat to set it fast. We have never found a version of those shortcuts that tastes like the kaya we grew up on, so we still stand at the stove.

    The 'Roti Man' Era

    Operating as a traditional mobile vendor on a motorcycle, brought daily staples straight into the neighborhoods. The core offerings were simple but beloved: Roti Sapu Keping, Roti Bun Sapu, and Traditional Kaya.

  2. 1996

    The pandan patch

    To guarantee absolute freshness, the family grows their own pandan right in their backyard in Gelang Patah.

  3. 2018

    Home-Based Consolidation

    Transitioned operations entirely to the home, continuing to supply the established community directly from the house.

  4. Today

    Same pot, same twelve hours

    The batch size has grown; the method has not moved an inch.

The method

Five steps, and one of them takes twelve hours.

  1. 1

    Cut and blend the pandan

    Leaves are washed, snipped and blended with a little water, then strained through muslin. The juice is used the same day; left overnight it turns flat and grassy.

    Press the santan

    Grated coconut is pressed once, hard, and the first extraction goes straight into the pot. Nothing is diluted to stretch the yield.

    Whisk and double-sieve the eggs

    Whole eggs are beaten with gula melaka and passed through a sieve twice, so not a thread of chalaza survives into the cup.

  4. 4

    Stir over the double boiler — two hours

    Low, indirect heat, and a figure-of-eight that never stops. Rush this and the egg scrambles; walk away and it catches. It is finished when the custard holds the trail of the spoon.

    Seal warm, chill overnight

    Filled while still warm into food-grade cups, lidded and sealed, then cooled slowly overnight. The set happens in the fridge, on its own, with no gelling agent.

Every batch is made to order. Self-collect from the kitchen only for now — we are not couriering kaya until we can do it cold, properly.

Questions we get every week.

How long does it keep?

Three weeks refrigerated, unopened. Two weeks once you have opened it. There are no preservatives holding it together, so it keeps like something you made at home — because it is.

Does it have to stay in the fridge?

Yes, always. Fresh egg and coconut milk with no preservative will not sit happily on a shelf in Malaysian weather. We hand it over cold, so bring a bag and put it in the fridge when you get home.

Why is your kaya not bright green?

Because it is mostly leaf. Real pandan juice gives a muted jade that leans olive once egg and santan go in, and it fades in the pot, so we hold the batch steady with a single drop of food colouring. The vivid green on supermarket shelves is colouring doing all the work.

Is it halal certified?

Yes — JAKIM certified since 2011, and the Iskandar Puteri kitchen is audited annually.

Do you deliver?

Not yet. Self-collect from the kitchen is the only way to get a cup for now — kaya with no preservative needs to stay cold the whole way, and we would rather hand it to you than trust it to a warm van. Message us on WhatsApp and we will agree a collection time.

Can I order for a café or an event?

We do wholesale from 24 cups, and larger tubs for kitchens that portion their own. Corporate gift boxes need two weeks' notice.
